Salted & Chewy Chocolate Chip Cookies
The perfect mum snack! Dairy free, fructose free (except for the Choc chips), gluten free, crap free. Essential for the busy mum, toddler and chocoholic. They are so much better than store bought junk! These are wholesome and natural and nutritious. There’s no way you will ever catch me feeding my kids packets of well, anything really! ✌️👊
Ingredients:
1 1/2 cups almond meal
1 cup almond butter
1/2 cup rice malt syrup
1-2 pinches stevia leaf powder
1/2 teaspoon Celtic salt
1 tablespoon cacao or cocoa powder
1-2 tablespoons cacao nibs
1 teaspoon vanilla powder
1/4 cup organic dark chocolate chips
Whizz everything except chocolate chips in a food processor until it all comes together in a paste. Scoop out little handfuls and roll into balls and flatten with wet hands on to a lined baking tray. Press the choc chips into each cookie and Bake for 10-15mins at 180-200 Celsius. They will still cook as they are cooling on the tray so try to get them out of the oven just as they start to brown on the top. They can burn very quickly so don’t leave them too much longer if you’ve checked them and they are not ready.
I keep mine in the fridge in summer to prevent the choc chips from melting!
The rice malt syrup works really well here because it makes the cookies really chewy and is not overly sweet. You can of course omit the choc chips! I don’t eat them in my cookies as they contain sugar, but I add them for a fun way to get Oakes involved in cooking and as a special treat!
