White Chocolate Strawberry Smoothie Bowl and Raw Chocolate Grawnola
I’ve always believed you create the best recipes when there is nothing much in the cupboard! It was so warm and humid today and I couldn’t decide what I wanted for lunch while I was at the supermarket so I bought nothing and went home and created this! It was so good! I think I will be having it for breakfast every day until winter.
Ingredients For Raw Chocolate (gluten free) Granola:
1 cup Shredded coconut flakes
2 cups Melted Coconut oil
1/2 cup Cranberries without sugar or any other sour berry
2 cups Activated buckwheat kernels
1/2 cup Coconut sugar
3/4 cup Cacao powder & a handful of nibs
- Combine everything with your hands in a bowl and spread out evenly on a flat tray. Preheat your oven to 100degrees Celsius. You don’t want to roast or cook the Grawnola but just caramelise the coconut sugar and help it stick everything together. Also by not cooking it long or on high heat means you’ll retain more nutrients in the food. Keep a good eye on it and let it cool when you take it out before transferring it to a jar.
For the Smoothie:
1 punnet fresh frozen strawberries
3 frozen bananas
50c sized piece raw cacao butter
Heaped teaspoon acai powder
Tablespoon cashew butter
Coconut water
- To make the smoothie combine everything and blend blend blend! Add as much coconut water as you need to get the consistency you’d like. (Use less for an ice cream consistency). Sprinkle some Grawnola over the top and save the rest in a jar for later. I used fresh strawberries that I bought at the farmers markets last week and froze them a few days ago with their green tops cut off. Fresh frozen are so much sweeter than a bag of frozen star errors from the supermarket!
