SuperFood Ice – Cream for Breakfast
I was hesitant to post again because I recently found out that approximately half of my posts have been permanently deleted which included all the posts from 2014!! But when life gives you lemons, make banana ice cream……?
Also my thermo-cook super duper Aldi brand Thermomix recently broke down, for the third time… Actually this is replacement number 3 so from now I am going to give Aldi brand electrical appliances the boot. Anyway I am actually using my magimix food processor to blend the frozen bananas, which is working extrememly well, in fact I would go as far to say it is producing fluffier icecream than the thermo-cook, but I recommend cutting the bananas down almost to slicing size before freezing to make sure you don’t break the Magimix!
Recipe
2-3 Ripe Frozen Sliced Bananas
1 1/2 Cups Frozen or Fresh Strawberries (I used frozen)
1 Tablespoon Loving Earth Cacao Powder
Coconut Water to help with the blending if you need it
1 Tablespoon Loving Earth Lacuma Powder (available any healthfood shop)
Organic Blueberries
Cacao Nibs
Hemp Seeds * (available from good healthfood shops)
Blend the banana and strawberries together until fairly smooth, then add the cacao, lacuma, coconut water. Blend until creamy, fluffy delicious ice creaminess appears, top with the bloobs, the cacao nibs and a sprinkling of hemp seeds. EAT. Do NOT share.
* Hemp seeds are an extremely amazing health food, containing essential amino acids that the body does not produce on its own! They also are high in essential fatty acids, omega 3, 6 & 9, folate and B vitamins and vegetarian protein! Considered to be an absolutely ideal pregnancy, lactating and vegan food!
If you know me well, you would know that I don’t like added sugar in most things, especially anything that contains fruit as it is sweet enough, but if you have not ripened the bananas until they have black spots, or if you like it extra sweet, you could try adding a little maple syrup or coconut nectar to the recipe. My other favourite toppings are nectarines, fresh strawberries, coconut, homemade granola and adding protein powder or coconut oil to the mix before blending. Don’t limit yourself to just breakfast either. Keep a stash of frozen fruit in your freezer to make this for guests, the kids or yourself after dinner when you need a treat! Enjoy 🍧
