Recipe: A Good Salad

IMG_0761.JPG I wish I could write that this salad was my own creation, but it is the creation of my husband who whipped it up for us and probably without a second thought. He comes from a foodie background and knows instinctively what goes well together and how to cook them. What I love about this salad is that is so nutritious and almost 100% raw (apart from the eggs), at the same time it is hearty yet simple. Ingredients : (serves 2) 1 bunch rocket 1 bunch parsley 2 organic free range eggs 1 avocado 1 zucchini Half 1 Spanish onion Apple cider vinegar Dressing: Sesame seeds, fresh lemon juice, olive oil, salt. Chop the onion finely and soak in a little apple cider vinegar for 10minutes. Soft boil your eggs, around 3.5-4minutes. Cool eggs in cold water when timer is done. Finely chop parsley and grate the zucchini and place in salad serving bowl. Dice or slice the avocado and add to salad. Add rocket and toss gently. Mix your dressing. Add the drained onions and peel and slice in half your eggs. Pour dressing over salad and place eggs on top and sprinkle with more sesame seeds and salt. Enjoy! I certainly did. Ali x
