Raspberry & Coconut Icy Pops Recipe and Cravings
I decided to make these one morning after running out of fresh fruit, normally I must eat a piece of fruit as soon as I get out of bed to avoid low blood sugars and morning sickness. The weather is warming and an ice block before breakfast is just what the baby needs! It is a very simple recipe, the hardest part is waiting for them to freeze. This will take approximately 4-6 hours. I make them after dinner and freeze overnight. We lick the bowls and spoons and sometimes have enough left over for some “ice cream” or a smoothie after dinner.
Recipe :
2 cups frozen raspberries or frozen mango or both
500ml coconut milk (the more coconut milk the creamier)
1/2 teaspoon vanilla powder
1-2teaspoons maple syrup (optional)
Blend until smooth and pour into ice block moulds to freeze. Simple, healthy, delicious! These ice blocks have been very successful at fulfilling my 1st and 2nd trimester sweet tooth cravings, and without the excess fat, sugar and additives found in commercial ice creams and confectionary.
